I hope you liked today's video! Please take into consideration that I am not a nutritionist or diet expert, these are just recipes that are better for you than sugary cereals or pancakes. Breakfast is extremely important because it fuels your body and kickstarts your day, so never ever skip it! Feel free to modify these recipes to your liking, as they all can be changed super easily!
-2 slices of toast
-1 avocado, mashed
-1 tsp salt
-1 tsp pepper
-1/2 lemon, juiced
Instructions: Toast the bread, and while it's toasting, mash up the avocado and add salt, pepper, and lemon. Spread on toast and enjoy!
Peanut Butter Banana Toast
-1 slice of toast
-1 tbsp peanut butter
-1/2 tsp cinnamon
Instructions: Toast the bread and spread peanut butter onto it. Slice the banana and add it on top. Finish with a sprinkling of cinnamon.
-1 packet Acai Puree (I got mine at Whole Foods)
-toppings of your choice (I used strawberries, blueberries, and granola)
Instructions: blend the banana and acai puree in a blender until a thick smoothie consistency is reached. Pour into a bowl and top with whatever you please!
-1/2 lemon, juiced
-5 sprigs of parsley
-1 cup of spinach
-1 1/2 cups water
-1/2 cup of ice
Instructions: cut up the apple and add it to the blender, along with the parsley and spinach. Juice the 1/2 lemon and add water and ice. Blend until a juice consistency is reached.
Waffles (modified from http://alimentageuse.com/home/2014/02/10/vegan-waffles-two/)
1 Tbsp flax meal
3 Tbsp warm water
3 tsp coconut oil in liquid state (vegetable oil or grapeseed would work here too)
1 cup whole wheat flour
2 tsp baking powder
1 tsp sugar
1/4 tsp salt
1 cup almond milk (or other milk)
1 tsp vanilla extract
Preheat a waffle iron.
Mix flax meal and warm water and let sit for about 2 minutes until it's thickened. Add in coconut oil and mix.
Add flour, baking powder, sugar, salt, almond milk, vanilla extract and whisk together until no lumps remain.
Pour into waffle iron and cook according to manufacturer's instructions. Serve with toppings of your choice!
